Carol Clayton

Hello friend and welcome!

My name is Carol Clayton and I’m passionate about sharing delicious vegan recipes with you that are also gluten-free. My mission is simple and that is to feed people plants. I started my food blog, during the Covid pandemic, as a creative resource to help folks on their vegan culinary journey. I truly feel that what we eat is one of the most powerful choices we can make. VegetaFull, in a word, embodies the idea that you can have a full heart and a full belly at the same time all by eating plants. I’m so happy we’re on this journey together!

A little about me

Carol Clayton

I live on the beautiful Olympic Peninsula in Washington State and am surrounded by all sorts of small independent farms such as my partner farm, SisterLand Farms. You’ll see the colorful produce from these farms in my photos where I strive to capture the joy in each recipe. It is an inspiring place to live, and I feel very lucky. I have 4 grown children and live in the home where we raised our kids with my husband Todd and our Scottie dog, Piper. If I’m not cooking up a storm in my kitchen, you can find me getting my running shoes muddy on the Olympic Discovery Trail or swimming in the crystal clear waters of Lake Crescent.

Let’s connect!

Carol Clayton

I find so much joy in plant-based cooking and aspire to spark curiosity about vegan food by creating easy-to-follow recipes that are both delicious and doable. I’d love to connect more with you through my newsletter which you can subscribe to on the home page. This is where you’ll be the first to know about upcoming cooking classes, get a free e-cookbook for joining the Vegetafull community, and never miss a recipe!
